BBQ Cape Grim Beef Ribs with Chipotle BBQ Sauce

Ingredients

2kg Cape Grim beef short ribs


Rib Rub

1/4 cup Paprika
1 tbls Chili powder
1 tbls Ground cumin
1 tbla Dark brown sugar
1 tbls Salt
2 tsp Cayenne pepper
1 tsp Garlic powder
1 tsp Ground black pepper


BBQ Sauce

1 Brown onion, finely diced
3 Garlic cloves, finely grated
1 1/2 cups Tomato ketchup
1/2 cup Dark brown sugar
1/2 cup Water
3 tbls Cider vinegar
3 tbls Worcestershire sauce
2 Chipotles in adobo sauce, finely chopped
Murray River Pink Salt
Freshly cracked black pepper
Extra-virgin olive oil
Vegetable oil

 

Method

1. For the rub, combine, paprika, chilli powder, ground cumin, brown sugar, salt, cayenne pepper, garlic powder, and pepper together.
2. For the ribs remove any membrane from the ribs, then evenly rub the spice mixture on all sides of the ribs, wrap tightly in cling wrap and refrigerate for 24 hours.
3. Light the smoker using charcoal and hickory, prepare it for indirect cooking. 4. To cook the ribs, remove the ribs from the refrigerator, and allow the ribs to come to room temperature. Place the ribs meatier-side-down on the grill away from the coals. Cook the ribs for 3 hours, adding more coals as needed.
5. For the BBQ sauce, heat a little vegetable oil in a medium saucepan over medium heat until shimmering, add the onion and garlic and cook, stirring occasionally, until softened, add the remaining ingredients, whisk to combine, and bring to a simmer. Reduce the heat to low and continue to simmer, whisking occasionally, until the flavours have melded and the sauce has reduced to about 2 1/2 cups, about 30 to 40 minutes. Remove from the heat and set aside. 1. For the ribs, after 3 hours, turn the ribs over and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. 2. Brush the ribs with the BBQ sauce and then cook for another 5 minutes. 3. Tt serve, slice the ribs into individual pieces, spoon over a little more sauce.
